Lemon Drizzle Tray Bake Cake...

Hello everyone,

I recently posted up this pic on Insta and asked if you would like to see a recipe of this Pink lemon drizzle cake up on my blog, and you guys said yes so I thought I would share with you how I made it. This cake is so easy and simple to make and would be great for a summer BBQ or afternoon tea.

Ingredients 
- 3 eggs
-Self raising Flour
-Caster sugar
-Butter
-1 lemon
-Icing sugar 
-Sprinkles

Method: For the Cake 
  1. I start by weighing the eggs and then however much the eggs weigh, I will then weigh the butter and sugar and cream them together. 
  2. I then add the eggs one by one and whisk in.
  3. I will then take the lemon and grate the rind of the whole lemon into the mixture and then cut it in half and use the juice and add into the mixture.
  4. I then add the flour (add the same amount as the eggs weighed).
  5. I then added the mixture to a rectangular tray and bake at Gas Mark 5/ 190 degrees for around 15-20 minutes.
Method: For the Icing 

  1. Take the juice of the other half of the lemon and begin to add the icing sugar until the mixture is runny.
  2. Add a little bit of pink food colouring to make the icing a pastel pink colour.
  3. Pop the icing into a piping bag and snip the end off.
  4. When the cake is cool drizzle the icing over the entirety of the cake.
  5. Then add sprinkles of your choice.
  6. Finally, cut the cake into squares!
