Peggy Porschen Inspired Christmas Cupcakes | Blogmas #10

Hello everyone, so todays post I think is my favourite of Blogmas so far! So I was scrolling through Peggy Porschen Instagram last night and came across some amazing cupcakes and though why not re create them, seeing as Peggy's is definitely not local to me :(. I didn't follow a recipe I just used the cupcake mix I usually do, which is...

Ingredients- Cake
4 eggs (weighed)
Butter (however much the eggs weighed) 
Caster Sugar (however much the eggs weighed) 
Flour (however much the eggs weighed) 
coco powder- 2 tablespoons

Ingredients- Icing
Butter 
Icing sugar 
gingerbread decorations
white roll out icing
sprinkles

Method 
  1. Firstly,  pre heat the oven to gas mark 5. Begin by weighing the 4 eggs and placing them to one side in a bowl.
  2. Then weighed the caster sugar and butter to however much the eggs weighed, In this case it came to 245g.
  3.  Beat the butter and sugar until light and fluffy.
  4. Add in the eggs, two at a time to ensure they do not curdle.
  5. Next, weigh the flour and sift into the mixture along with the 2 tbsps of coco powder.
  6. Place some silver paper cases into a muffin tray.
  7. Using an ice cream scoop (or two spoons) load the mixture into the cases, making sure they are 3/4 full.
  8. Place the cakes into the oven for 15-20 minutes.
  9. Whilst the cupcakes are baking, start on the icing. 
  10. Place 2 tbsps of butter into a bowl and using an electric whisk, beat until soft and lighter in colour.
  11. Add tablespoons of icing sugar to the butter. I usually do this until it tastes more sugary than butter. I basically just chuck everything in haha.
  12. Once the cakes have been removed from the oven and are cool, place the icing into a piping bag.
  13. For the little round balls, I used some roll out icing and food colour, carefully adding in the correct amount of food colour. Then roll them into little balls
  14. Now you can begin pipping the icing onto the cake, making sure it is central and tall.
  15. Then place a gingerbread man into the icing (I got mine from Sainsbury's for £1.50).
  16. Then sprinkle some blue sprinkles over the cake and add one pink ball and one blue ball to the cupcake.

And there you have it, Your very own Peggy Porschen inspired Cupcake. These would be perfect for christmas treats or even as a gift!!
